alilarter Feeling the quarantine blues? Here’s my Ultimate Whisky Bacon Cheeseburger. This burger recipe is a sure-fire way to brighten up anyone’s day. I always say, if you’re going to make a burger, MAKE a burger. This recipe delivers. And to top it off, treat yourself with a cocktail while prepping the meal. Oh, and try not to burn the house down in the process (see video😂). Enjoy!⁠ 1st 📸 @amyneunsinger and then slide to see mine. ⠀ ⁠⠀ #quarantinemeals⁠ ⠀ ⁠⠀ ⁠⠀ Ingredients:⁠⠀ ⁠⠀ SECRET SAUCE:⁠⠀ ½ cup mayonnaise ⁠⠀ ¼ cup ketchup ⁠⠀ ¼ cup finely chopped dill pickle ⁠⠀ ¼ cup finely chopped pepperoncini ⁠⠀ ⁠⠀ BURGERS:⁠⠀ 8 thick-cut apple-wood smoked bacon slices ⁠⠀ 1 tablespoon whiskey ⁠⠀ 8 ounces ground sirloin ⁠⠀ 8 ounces ground chuck ⁠⠀ ¼ teaspoon salt ⁠⠀ ¼ teaspoon freshly ground black pepper ⁠⠀ Four ⅓ inch thick slices sharp Cheddar cheese ⁠⠀ 4 soft white hamburger buns Butter ⁠⠀ ⁠⠀ To make the secret sauce:⁠⠀ ⁠⠀ Whisk all the sauce ingredients in a small bowl to blend. Cover and refrigerate. (The sauce can be made 3 days ahead. Keep refrigerated).⁠⠀ ⁠⠀ To make the burgers (4): ⁠⠀ ⁠⠀ Gently mix the ground sirloin, salt and pepper in a medium bowl. Form the mixture into 4 even patties. ⁠⠀ Arrange the bacon slices side by side in a heavy skillet. Pour the whiskey over the bacon. Cook over medium heat until the bacon is browned and crisp. Remove from pan and cover bacon to keep warm. Pour out excess grease. ⁠⠀ Add the meat patties to the skillet with the bacon drippings. Cook patties for 2 minutes over medium-high heat (do not press down patties with a spatula). Turn patties over and place 2 bacon slices, then slice the cheese atop each patty. Cover the skillet with a lid and cook the patties until the cheese is melted and the meat is cooked to desired doneness, about 2 minutes longer for medium-rare. Meanwhile, butter the hamburger buns and place in a toaster oven just until warmed through but still soft. Top each with a patty. Spoon the secret sauce generously over each patty, cover and devour. ⠀

alilarter Happy Cinco de Mayo!! Here is a classic delicious margarita recipe. Why on earth I made it for one is beyond me?! Just throw it all in and get after it. But add your jalapeños now if you like to heat it up! ⠀ Ingredients:⠀ ⠀ SPICY TEQUILA:⠀ 1 750-ml bottle premium tequila ⠀ 1 jalapeño chile, cut in half lengthwise with seeds intact ⠀ ⠀ JALAPEÑO MARGARITA (1 serving):
2 ounces spicy tequila
2 tablespoons fresh lime juice⠀ 1 tablespoon Cointreau
1 teaspoon agave syrup
Ice cubes⠀ ⠀ ⠀ Directions:⠀ ⠀ To make the spicy tequila: ⠀ Open the tequila bottle and drop the jalapeño in. Cover with the bottle cap and let flavors infuse for at least 1 day and up to 3 days. ⠀ To make each jalapeño margarita: combine �cup, spicy tequila, 2 tablespoons lime juice, 2 tablespoons water, 1 tablespoon Cointreau, 1 teaspoon agave syrup and ½ cup ice cubes in a cocktail shaker. Shake vigorously for 30 seconds.⠀ Fill a rocks glass with fresh ice cubes. Strain the margarita over the ice cubes and serve. ⠀ ⠀ #quarantinemeals #margarita #cincodemayo

alilarter Hey guys! It’s Giving Tuesday. I learned about Teen Hotline a few weeks ago, and was blown away by their work! Youth need support now more than ever. Teen HotLine, an international youth peer hotline, is staffed by highly trained teens and supervised by mental health professional. They have been providing that critical support for youth during Covid-19. They have been managing a dramatic increase in texts and emails from teens around the world and need your help to continue to remain operational to support teens during this crisis. The hotline has seen a heartbreaking increase in reports of anxiety/stress (up 16%), loneliness (up 35%) and child abuse (up 166%) since the start of the pandemic. alilarter Calling all bakers! This Triple Berry Cake recipe is a family favorite and your kids will LOVE it. I like the novelty of flipping the cake and seeing the maze of berries on the top. A dish like this makes me feel like I can accomplish things even when life doesn’t. You can use all one kind of berry or add an herb to switch it up. Always taste the berries for tartness, and adjust the sugar as needed. Video coming next! ⁠ INGREDIENTS:⁠ ⁠ 1 cup frozen blackberries
⁠1 cup frozen blueberries
1 cup frozen raspberries
⁠3 tablespoons powdered sugar⁠ 2 ¼ cups all-purpose flour ⁠ 1 teaspoons baking powder ⁠ 1 teaspoon salt
⁠1 teaspoon baking soda
⁠1 cup whole milk ⁠ 1 tablespoon fresh lime juice ⁠ 2 teaspoons vanilla extract ⁠ 12 tablespoons (1 ½ sticks) un-salted butter, softened ⁠ 1 ⅓ cups sugar
⁠3 large eggs
⁠Powdered sugar (for sifting)⁠ Finely grated lime zest (for garnish)⁠ ⁠ Directions:⁠ ⁠ 1. Position the rack in the center of the oven and preheat to 350°F. Butter two round 8-inch cake pans with 1-inch high sides. Line the bottom of the pans with parchment paper, butter and flour. ⁠ 2. Combine all the berries in a medium bowl. Add 3 tablespoons powdered sugar and toss gently to coat. Divide the berry mixture equally between the prepared pans, arranging in an even layer. Set aside. ⁠ 3. Whisk the flour, baking powder, salt, and baking soda in another medium bowl to blend. ⁠ 4. Mix the milk with the lime juice, creating buttermilk, and add vanilla in a small bowl. ⁠ 5. Using an electric mixer, beat the butter and sugar in a large bowl until light and fluffy. Add the eggs, 1 at a time, beating well after each addition. Add the flour mixture, alternately with the buttermilk, and beating just until blended.⁠ 6. Bake the cakes until a tester inserted into the center comes out clean, 40 minutes. Transfer the cakes to a rack and cool completely in the pans. Invert each cake onto a plate. Remove the parchment paper. Sift powdered sugar generously over each cake. Garnish with a sprinkling of lime zest.⁠ ⁠ #quarantinemeals
